Galbijjim (갈비찜), soy-braised short ribs, a festive dish usually served on traditional holidays and special occasions in Korea. It is fall-off-the-bone tender, sweet and savoury, accompanied by various vegetables and served with rice. My version incorporates new spring vegetables and is served with homemade Kkakdugi (radish Kimchi) and a bowl of soy glazed rice with quail egg yolk which you mix together to create creamy-savoury rice.

You will receive below in your Sujin box:

  • Two portions of warm spring vegetable medley (asparagus, fresh broad beans, Jersey Royal potatoes), sesame Yuzu emulsion, wild garlic Kimchi served with Gim (Korean seaweed) and rice paper crisps
  • Two portions of Galbijjim (soy braised short ribs), pickled baby onions, new potatoes, Shiitake mushrooms and braised radish
  • Two portions of soy glazed rice served with raw quail egg yolks
  • Side dish
    - Homemade Kkakdugi (radish Kimchi) or Homemade Mak-Kimchi
