HWEDUPBAP - KOREAN SASHIMI RICE BOWL (SERVES TWO)
HweDupBap is a Korean Sashimi rice bowl, similar to poké bowl that we are used to but served with the spicy-sweet Gochujang sauce which adds a much richer depth of flavour.
On a bed of multigrain purple rice, there's Sashimi-grade salmon and tuna, crunchy winter vegetables (heritage carrots, candy beetroots), cucumber, lettuce, pear (for sweetness), sesame leaves, crispy Gim (Korean seaweed) and drizzled with spicy-sweet Gochujang sauce.
As a little starter, I've prepared morish prawn toasts served with Kewpie mayo and a comforting Doenjang (Korean soybean) soup with spring onions.
